Founded in 1958 by Michel Salmon with a first harvest of around 500 bottles. Today run in the third/fourth generation by Olivier Salmon and his son Alexandre.

Estate size: approx. 10 hectares, 85% planted with Pinot Meunier — unusual in Champagne, where this variety is mostly used as a blending partner for Pinot Noir and Chardonnay. Partly horse-worked vineyards, pressing in a traditional basket press.

Member of the "Club Trésors de Champagne" (select club of 28 grower-producers). The "Montgolfière" cuvée references the family's hot-air balloon, regularly flown over the vineyards. The rosé on our list is a single-varietal Pinot Meunier champagne.
